24 MONTHS IN FRENCH OAK BARRELS (50% NEW). The wine has an inviting bouquet of spice and violets, succulent freshness and lively acidity, with lingering raspberries and dark cherry notes. The refined structured tannins result in plenty of ageing potential. 100% from the Huon Valley, the grapes were all handpicked and fermented in a small open vat, with some whole bunches and alcoholic fermentation started spontaneously by the yeast naturally occurring on the grapes. After fermentation was completed, the wine remained on the skins macerating for a week before being pressed off, straight into 500 L French barrels, half being new oak. This extended period in barrel gave a desired structure in what was a slightly cooler vintage. It brings out delicate Pinot Noir nuances and retains essential stable tannins. Following natural settling, the wine was bottled unfiltered.
