SINGLE BARREL RELEASE - 24 MONTHS IN NEW FRENCH OAK. 100% from the Huon Valley. Rich aromas of plum and cherry with funky forest floor characters arising from the high percentage of whole bunches left in the ferment. Fine tannins and core acidity that give consistently good ageing potential for this wine. Grapes were all handpicked and fermented in a small open vat, with whole bunches and alcoholic fermentation started spontaneously by the yeast naturally occurring on the grapes. After fermentation was completed, the wine remained on the skins macerating for a week before being pressed off straight into a 500 L French barrel. The wine remained in barrel for 24 months undisturbed. Such extended period in barrel accentuate Pinot Noir character and reliable tannins for accurate ageing.
Following natural settling, the wine was bottled unfiltered.
