SINGLE BARREL RELEASE – 15 MONTHS IN NEW FRENCH OAK The wine is pure cool climate Chardonnay, with delicate blossom perfume, lemon zest and peach characters. The classic Huon Valley natural acidity is in tune with the perfume and seductive spice that derives from maturity undisturbed in a new French oak barrel. 100% from the unique Huon Valley, the brazen natural acidity with savoury oak elements has the elegant structure to age that will reward the patient drinker. Grapes were all handpicked and full bunch pressed into a new French barrel, where alcoholic fermentation started spontaneously by the natural occurring (indigenous) yeast from the grapes. No cooling system applied, the wine was allowed to ferment to completion and remained undisturbed to mature in barrel, on its lees, for 15 months. In the last stages, the wine was removed from barrel to settle naturally, without any additions, before being bottled unfiltered.
